Banana, walnut and sesame health bars

Sesame seeds may be tiny but they pack a flavour punch. These health bars make a fantastic energy snack for long bike rides, lunchboxes or runs on the weekend.

Ingredients

  • 300g pitted dried dates
    200g dried bananas, chopped
    130g walnuts
    2 tbsp tahini
    1 tsp vanilla essence
    2 tbsp toasted sesame seeds
    3 tbsp puffed quinoa

Method

  1. Step 1

    Line a 21-centimetre-square container with baking paper.

  2. Step 2

    Soak the dates in water for 10 minutes then drain.

  3. Step 3

    Place the dates, banana, walnuts, tahini and vanilla in a food processor and process to a paste (it's fine if it still has some texture). Add the sesame seeds and quinoa and fold through the paste.

  4. Step 4

    Press mix into the lined container, refrigerate overnight, then cut into 16 squares.
