Classic cauliflower cheese gets a makeover to become these delicious pan-fried fritters.

Ingredients

  • 1 whole cauliflower, florets and peeled stem roughly chopped

  • 1 onion, minced

  • 2 cloves garlic, minced

  • ½ cup parsley, roughly chopped

  • 2 eggs

  • 1 cup plain flour

  • 1 tsp vegetable stock powder

  • ½ tsp baking powder

  • 1 cup grated tasty cheese

  • ½ cup parmesan, finely grated

  • salt and pepper, to season

  • 1 cup vegetable oil, for frying

Method

  1. Step 1

    Place the cauliflower in a microwave-safe dish and add 1 tbsp of water. Cover with a plate and microwave for 5 minutes. Transfer to a large bowl and add the onion, garlic, parsley, eggs, flour, stock powder, baking powder and cheeses. Season well with salt and pepper and mix to combine.

  2. Step 2

    Heat a deep frying pan over medium heat and add the oil. Taking 1 cup measures of the cauliflower mixture, shallow-fry for about 4 minutes on each side to make large fritters. Serve warm or at room temperature.
