Adam Liaw’s orange and almond mug cake
This super-simple mug cake can be made in minutes using ingredients you might already have in your fridge and pantry.
Ingredients
¼ cup (35g) almond meal
¼ tsp baking powder
1 tbsp caster sugar
1 tbsp extra virgin olive oil
2 tbsp milk
1 tsp marmalade, plus extra to serve
vanilla ice-cream, to serve
Method
Combine all the ingredients except the ice-cream in a mug and mix to combine. Microwave on high for 1-2 minutes until the cake is set. Top with an extra teaspoonful of marmalade and a scoop of ice-cream.
Adam’s tip: There is a lot of variation in microwaves beyond just the wattage. If your mug cake isn’t cooked properly the first time, adjust the timing and make a note of it for the next time.
