This is basically sausages and eggs, but cooking the chorizo in the pan first creates a delicious base to fry the eggs in.

Ingredients

  • 2 tbsp olive oil

  • 3 chorizo, cut into 1cm rounds

  • 4 eggs

  • salt and pepper, to season

  • smoked paprika, for sprinkling

Method

  1. Step 1

    Heat a large frying pan over medium heat. Add the oil and chorizo and fry for about 5 minutes, until the chorizo is browned. Remove from the pan with tongs or a slotted spoon and place on a serving plate, leaving the rendered oil in the pan.

  2. Step 2

    Crack the eggs into the pan, reduce the heat, and gently cook sunny-side up, without flipping.

  3. Step 3

    Season the eggs well with salt and pepper and add to the serving plate with the chorizo. Sprinkle with a little smoked paprika and serve.
