It might be a grown-up apple crumble but it will bring out the big kid in all of us.

Ingredients

  • 6 Granny Smith apples, peeled, cored and cut into wedges

  • 50g sugar

  • ¾ cup red wine

  • 1 cinnamon stick

  • vanilla ice-cream, to serve

CRUMBLE

  • 175g butter, cubed

  • 150g soft brown sugar

  • 100g rolled oats

  • 150g plain flour

  • ½ tsp baking powder

  • ½ tsp flake salt

Method

  1. Step 1

    Heat your oven to 200C fan-forced (220C conventional). Combine the apple wedges with the sugar, red wine, cinnamon stick and about ½ a cup of water in a saucepan over medium heat and heat for about 10 minutes, until the apples are warm and slightly softened. Remove the apples with a slotted spoon and transfer to a baking dish that will fit the apples in a thick layer. Simmer the red wine mixture for about 10 minutes until reduced to a syrup and pour the syrup over the apples.

  2. Step 2

    Combine all the ingredients for the crumble and rub together with your hands until the mix resembles coarse breadcrumbs. Cover the apples with the crumble mixture. Bake for 25-30 minutes and serve with ice-cream.

Adam’s tip: You can make the crumble ahead of time, but I prefer to bake it so it’s served fresh out of the oven and still warm.
