Reuben-style cheese melt

Turn the classic American deli sandwich into a share-friendly slab topped with bubbling cheese.
Ingredients
⅓ cup creme fraiche
1 tbsp American mustard
½ cup grated Swiss cheese
½ cup grated mozzarella
¼ tsp caraway seeds
1 medium crusty loaf, halved lengthways
250g store-bought corned beef, thinly sliced
1 cup sauerkraut, drained
seeded mustard, to serve
pickles, to serve
Method
Step 1
Preheat the grill to high. Mix together the creme fraiche, mustard, cheeses and caraway seeds and season with plenty of cracked black pepper.
Step 2
Place the bread halves on a large oven tray, cut sideup. Top with meat, sauerkraut and cheese mixture. Place under the grill and cook for 3-4 minutes, or until golden and bubbling.
Step 3
Serve with seeded mustard and pickles.
